Cheesy Tortellini Crockpot Soup

Did you know January is national soup month?
There’s nothing better than warming up with a delicious bowl of hot soup on a cold winter day. This recipe is easy because all you have to do is dump all of the ingredients in the crockpot and turn it on. Let the crockpot worry about dinner tonight!

Cheesy Tortellini Crockpot Soup

Ingredients:
16 oz. frozen tortellini
1 small bag of spinach (About 2 handfuls)
2 cans (15 oz. each) Italian style diced tomatoes
4 cups vegetable broth
1 block of cream cheese (8 oz.)

Crockpot soup 1Add fresh spinach, diced tomatoes, and vegetable broth to crockpot. Dice up the cream cheese using a knife and then add to the crockpot as well.
Crockpot soup 5Turn crockpot on high and cook for 3 hours. Stir occasionally.

Crockpot soup 6After 3 hours, add frozen tortellini to crockpot and continue to cook for another hour.
