After Thanksgiving is over, you may find your fridge filled with leftovers. Well we have the perfect recipe to use up those mashed potatoes and ham (or turkey) you have!
Leftover Mashed Potato Pancakes

– 3 cups of Grandma’s delicious Mashed Potatoes
– 3/4 cup cheddar cheese
– 1 lightly beaten egg
– 1 cup of cooked ham (or turkey), diced
– Vegetable oil
Step 1: Mix together mashed potatoes, cheese, egg, ham, pinch of salt, pinch of pepper, and 3 tablespoons of flour. If the mixture sticks to your hands, add more flour.
Step 2: Using your hands, roll the mixture into 12 compacted balls and then flatten.
Step 3: Add flour to a shallow dish and dip each side of the pancake into it.
Step 4: Heat vegetable oil in pan.
Step 5: Place the pancakes into the pan carefully. Fry each side for about 1:30-2 minutes, or until golden brown.
Step 6: Remove pancakes and place on a paper towel-lined dish.
Step 7: Sprinkle with salt and enjoy!
