Creamy Gnocchi Soup with Spinach and Sausage

Ingredients:
– 1 lb. hot Italian sausage
– 1 cup diced yellow onion
– 4 cups chicken broth
– 1 cup frozen spinach (thawed)
– 1 pound potato gnocchi
– ¾ cup heavy cream

Step 1: In a large pot, add the Italian sausage and diced onion. Cook on medium/high heat until the sausage is fully cooked (Drain out excess grease).

Step 2: Add in the four cups of chicken broth and bring to a boil.

Step 3: Turn the heat down to medium low and add the gnocchi and spinach. Cook for 5 minutes or until the gnocchi is tender.

Step 4: Stir in the heavy cream and let cook for 5 minutes.
