Asparagus, Mushroom, and Cheddar Quiche

- 1 9-inch pie crust
- 2/3 cup chopped asparagus (fresh, local asparagus is best)
- 1/2 cup sliced mushrooms
- 1 cup shredded cheddar cheese
- 5 large eggs
- 1/2 cup heavy cream
- 1/2 whole milk
- 1/4 teaspoon salt
- black pepper to taste
Step 1: Preheat oven to 375 degrees. Lay the pie crust in your 9-inch pie pan.
Step 2: Lay the asparagus on the bottom.
Step 3: Spread out the mushrooms on top of the asparagus.
Step 4: Sprinkle cheddar cheese on top of the mushrooms.
Step 5: Whisk the eggs, heavy cream, whole milk, salt, and pepper until light and fluffy, about 2 minutes (you can also use a mixer for about 1 minute).
Step 6: Pour the egg mixture over the vegetables and cheese. Fill it up as far as you can without overflowing.
Step 7: Bake for 35-45 minutes, until the center is firm.
